Rice Pilaf

  Chickpeas
8oz can
  Butter 2tsp
  Onion chopped 1/2cup
  Long grain white rice 2cups
  Tomatoes chopped 1cup
  Peas 1/4cup
  Chicken stock or water 3cups
  Cumin 1/2tsp
  Red chilli powder 1/4cup
  Salt       
  Parsley chopped 1/4cup
1. heat the butter ghee over medium heat and saute onion for 2 minutes.
2.Wash and soak rice for 10minutes.Drain the water and add to the onions.Stir and add the tomatoes,peas,spices and saute for 2 more minute. Pour in the stock. Bring the mixture to a boil, lower the heat, cover the pan, and cook  for 10 minutes, until the rice has absorbed all the liquid. Stir in the chickpeas when rice is cooked.cook for 2minutes.Garnish with parsley and serve with Fish or Lam with slices of fruit.
Cooking variation:Add some cooked whole lentil along with chickpeas to make Rice lentil pilaf.
