Creamy Spinach Soup


Frozen Spinach 1cup
Potato 1
Scallion(small red onion) chopped 1
half and half milk 1/4cup
Chicken stock 1/2cup
Butter 1tsp
Black pepper
parmesan cheese 2tsp
Salt

Preparation
1.Defrost the frozen spinach.Strain excess water.
2.Boil the potato in salted water.Peel and Mash.Blend the spinach and potatoes in a food processor.
2.Heat butter in a saucepan.Add the onions saute for a minute.add spinach and mashed potato puree.saute for few minutes.Add the chicken stock and milk .Season with salt and pepper.simmer for 10minutes.
3.Sprinkle with some grated parmesan cheese and serve
