September 27, 2000 Update #9 | ||||||||
Today we are in Port Washington, NY, Manhasset Bay. We, unfortunately, were unable to leave as planned a few days ago due to fuel injector failure. We are now having these replaced and should be underway either today, Sept 27th or the 28th to return to Raritan Yacht Club for a few days at which time we will connect with family and friends. From there, we will continue our travels South via Cape May, NJ and then through the C&D Canal to make our way to Annapolis, MD. In Maryland, we will visit with Cory, my son, and his girlfriend Carrie. We are also looking forward to a visit from Terry’s cousin, John, and his wife, Pat who will come aboard for a week to sail with us to a few of Maryland’s popular sailing spots (St. Michaels, Oxford, etc.). Attached is a travel log that Terry is maintaining; we thought you would be interested in seeing where we have traveled up to this point and their distances. Also included is a wonderful recipe that Terry prepared of Marinated Cod a popular dish in New England. Enjoy! Marinated Cod with Peppers & Tomatoes (recipe by Terry Blackburn) Marinade the following in a zip lock bag at least 4 hours or overnight; increase marinade as needed to coat the fish: 1 ½ lbs of cod fillets juice of one lemon ¼ C olive oil ½ C apple cider vinegar 1 onion coarsely chopped 2 T hot sauce 3 cloves garlic chopped Sautee 3 T olive oil 2 plum tomatoes chopped 1 red or green pepper diced Add Fish, onions & liquid from marinade Salt and pepper Cover and cook over low-medium heat, occasionally basting the fish with the liquid; serve when fish and peppers are cooked; approximately 15-20 minutes. |
