spices
Of course, when you think "Orient" you think spices. Egyptian bazaars display staggering amounts, sculptured into colorful spice pyramids, from yellows of saffron and ochres of curries to deep blues of powdered indigo dye. Food is usually spices but not spicy. Cumin and salt are found on restaurant tables.
koshary
Koshary is my favourite egyptian dish:) Rice, vermicelli, lentils, spaghetti, mini penne, tomato sauce, crystallized onions, and chickpeas all in the same plate. It is usually served with a nice tomato sauce.

falafel
Falafel also called ta'miyya is a traditional Egyptian food. They were probably first prepared in ancient Egypt and, from that era, these vegetarian delights have remained the country's national food. Traditional falafel are spicy, deep-fried bean patties or balls. Their basic ingredient is ground broad beans, chickpeas, or a combination of both. They are tasty, low in price, rich in proteins and carbohydrates, and high in calories, and they make very satisfying main courses or light snacks.
baklava
Baklava is nuts, honey and cinnamon between sheets of thin pastry dough. It's a common dessert in Egypt, Turkey and Greece.
fool - fava beans served with oil and lemon, sometimes also with onions, meat, eggs or tomato sauce
fatir - sort of pancake/pizza made of layers of flaky filo pastry with sweet or savoury fillings
molokhiyya - spinach-tasting dish made by stewing the leafy vegetable with meat or chicken broth and garlic.
A leafy, green, summer vegetable, molokhiyya is distinctively Egyptian, and locals will proudly serve you their traditional thick soup made from it. The chopped leaves are generally stewed in chicken stock, and served with or without pieces of chicken, rabbit, or lamb. This soup can also be served with crushed bread or over rice.
I was waiting almost a year to taste it and when i finally did..it was really good!!!
