Shrimp or Crawfish Etouffee
. 1 lb Shrimp and/or Crawfish
. 1 Stick Butter
. 1 Cup chopped onion
. 1 Cup chopped bell pepper
. 1 Cup chopped celery
. 1/2 Cup chopped green onion
. 1/2 Tsp. parsley flakes
. 1 Clove minced garlic
. 1 Can chicken broth
. 2 Tbsp. Plain flour
. 2 Tbsp. Tomato paste
. Salt and Pepper to taste
Directions
Saute onion, bell pepper, celery, green onions and garlic in
butter. Add chicken broth, tomato paste and parsley flakes
and simmer 30 minutes. Add salt, paprika and red pepper.
Mix well. Add shrimp and/or crawfish and simmer 15 to 20
minutes; add flour to a cup of water and mix well, then add
shrimp to thicken. Add water if to thick. Serve over rice

Creole Jambalaya
. 1 Tbsp. butter or margarine
. 1 Large onion sliced thin
. 3/4 Cup chopped green pepper
. 1 Clove garlic minced
. 2 Tbsp. Flour
. 1 lb. smoked pork sausage or ham, cut in 1/2 inch cubes
. 1 lb cooked shrimp
. 6 Cups peeled and diced tomatoes
. 2 Tbsp. chopped parsley
. 3 Cups raw long-grain white rice
. 3 Tbsp. Worcestershire sauce
. 1 1/4 Tsp. dried thyme leaves
. 1/2 Tsp. Cayenne
Directions
In a large skillet or dutch oven, heat butter. Stir in onion, Green
pepper, and garlic. Saute for 5 minutes or until tender. Remove
from heat and stir in flour. Slowly add 2 1/2 cups water,and stir
until smooth. Place skillet on heat, and add remaining ingredients. bring to boil, Stirring constantly. Reduce heat and
simmer, cook covered, stirring occasionally for about 30 mins.
or until rice is tender. Serve sprinkled with chopped parsley as
desired...
Cajun Corn & Shrimp Bisque
. 4 Cups Pet Milk
. 1 Tsp. garlic powder
. 1/4 Tsp. Salt
. 2 Cans cream style corn
. 1Tbsp. Louisiana hot sauce
. 2 Cups potatoes, diced
. 1 Tbsp. Cajun Seasoning
. 1/2 Tbsp. black pepper
. 2 Tsp. sugar
. 2 lb party shrimp
Directions
Combine milk, potatoes, cajun seasoning, garlic powder,
salt,pepper, and sugar in a large pan. Cook over medium
heat for 10 minutes, stirring to keep from sticking. Add
corn and hot sauce and bring to a boil. Stir in shrimp and
cook for 2 minutes more.

Shrimp Dip
. 3 tablespoons butter
. 1 Tbsp. Worcestershire sauce
. 1/2 Tbsp. chopped green pepper
. 3 Tbsp. Ketchup
. 1 Onion minced
. Cayenne pepper to taste
. 2 seven ounce cans shrimp drained and mashed
. 1/4 lb yellow cheese or wine cheese
. 1 Tbsp. Sherry
Directions
Saute green pepper and onion in butter until soft,but not brown
Add remaining ingredients and cook in double boiler until thick.
Serve hot in a chifing dish with melba rounds...
