1 can (16 ounces) solid-pack pumpkin
(not pumpkin pie filling)
1/4 cup skim milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups of coolwhip fat free topping
thawed
out
Preheat oven to 425° Spray tortillas on
both sides
with non stick spray. Sprinkle 1/2
teaspoon of suger
on each side and put each in a large
muffin cup,
forming 6 baskets. Bake for about 10 min.
Till a
light golden brown. Cool on wire rack.
In a mediium bowl, mix at medium speed,
pudding mix,
pumpkin, milk, cinnamon and nutmeg until
blended.
Fold in whipped topping until blended,
then spoon in
to baskets. cover and chill.these are
realy good. You can
hold them in your hand and eat them.
