Chicken with Bealtaine Peach Sauce
1 whole chicken breast, split,
boned and skinned
2 teaspoons lemon juice
1 fresh peach, sliced
1 tablespoon butter
1 tablespoon minced red onion
1 tablespoon flour
1/4 cup champagne or white wine
For Chicken: In small microwave
safe dish arrange chicken with thicker parts to the outside, Sprinkle with
lemon juice and pepper, cover with waxed paper and microwave on HIGH until
no longer pink and cooked through, Add peach slices to chicken and cook
on High 1-2 minutes more.; reserve cooking liquid.
For Sauce: In 4 cup glass measure,
combine butter and onion. Cook on high 3 minutes, Stir in flour, and 3
tablespoons of reserved cooking liquid. Stir in wine or champagne.
Cook on high 3 minutes until thick, stirring after 1 1/2 minutes.
Serve chicken a peaches over rice or noodles and spoon sauce over chicken
Pork and Harvest Apples
1 Tablespoon oil
6 boneless pork chops
1 can cream of mushroom soup
1/2 cup apple juice
1 apple sliced
1 teaspoon oregano, garlic, and
basil
Cook pork in oil until done, stir in soup, apple juice, add spices, simmer 10 minutes, add apple slices; cover and cook 5 minute longer, Serve over rice or noodles.
Herbal Chicken and Rice
1 can condensed chicken broth
1 can stewed tomatoes
2 cloves garlic, minced
1 teaspoon each of basil, cilantro
and oregano
2 cups cubed cooked chicken
1 1/2 cup minute rice
1 cup peas
1/4 teaspoon hot pepper sauce
in 3 quart saucepan over high heat,
heat broth, tomatoes, garlic, and herbs to boiling, Add chicken , peas,
and Hot pepper sauce , Return to boil, remove from heat and let stand 5
minutes or until liquid is absorbed. Fluff rice with fork before
serving.
