Spinach Salad with Egg
1 pound spinach
leaves
5 green onions,
chopped
4 slices of
bacon ( or soy Bacon)
2 tablespoons
red win vinegar
1 Tablespoon
lemon juice
1 teaspoon
sugar
salt and pepper
to taste
2 eggs, hard
boiled, cooled and chopped
Wash leaves in cold water, pat dry and tear in to bite size pieces. Combine spinach and onions in large bowl, Fry bacon until crisp; drain and crumble over spinach mixture. In small bowl combine vinegar,lemon juice, sugar, salt, and pepper, pour vinegar mixture over spinach and toss. Sprinkle with egg.
Herbal Salad Dressing
3/4 cup olive
oil
1/3 cup red
wine vinegar
3 cloves garlic,
minced
1 tablespoon
dijon mustard
1/2 tablespoon
each of.. basil, parsley,, and chives
1 teaspoon
each.. fresh dill, marjoram, and tarragon
salt and pepper
to taste
Blend all ingredients in jar or cruet, chill over night, shake before use.
Herbed Tomato Cucumber Salad
1/2 cup Miracle
Whip or Mayonnaise
1 Cucumber
peeled and chopped
1/3 cup each
chopped...onion, and basil
1/4 teaspoon
salt
3 tomatoes
sliced
Mix all ingredients except tomatoes until well blend; chill and spoon over tomatoes
Mayan God Shrimp Salad
Lemon Juice
12 oz cooked
bay shrimp
3/4 cup chunky
salsa
1/2 teaspoon
lemon pepper
1/4 cup garlic
salt
2 sprigs cilantro
chopped
1/2 pound leafy
lettuce
In medium bowl, sprinkle lemon juice over shrimp. Add salsa, lemon pepper, garlic powder and chopped cilantro; cover and marinate 1 hour, Spoon unto lettuce leaves and garnish with seasonal fruit.
