Comments: As you will see, I digress. I am genetically unable to go in a straight line. I emailed you back around the first of Jan about this Texas boy not knowing about no smothered okra and you instructed me in the proper way. Thanks! Gumbo was great! Thought you'd get a laugh out of one of my exploits. Now, I consider myself, and my wife will concur, a good cook. Really, she's a great cook and I can follow a recipe. I guess most men can't even do that. Weird. Her mother taught home economics in High School and she began winning ribbons with her cakes when she was barely able to see over the stove. I'll send you some recipes if you'll tell me how. Anyway, in reading the recipe I misread something. Luckily, my wife saved the gumbo. I read the tomato sauce part as 15 - 24 Oz cans. Silly, huh? Anyway I bought about 360 oz. of tomato sauce along with the other ingredients and went to work. I was understandably concerned when I looked at can after can of tomato sauce and then looked at the pot. I looked at the tomato sauce, and looked at the pot. I thought "I don't think all this is going to fit." About this time, Rena' came in and said, "Did you leave any tomato sauce at the store? What in the world are you going to do with all that tomato sauce?" I told her. She said "Let me look at that recipe." Then I told her it was not polite to roll around on the floor laughing at me without explanation. Anyway, the gumbo was saved. I still put more tomato sauce than called for, but it was great anyway. Next I'll try jambalaya.

Comments: I am hoping to get your expert advice on something. I'm a grad student who is taking a Literature & Biography class this semester, and I've chosen Kate Chopin as my author. In case you've never heard of her, she was born Irish Catholic, but married a Creole. There's been a tradition in this class that you bring something for the class to eat while you're doing your oral work-in-progress and presentation (the class is Thursday nights so one can get pretty hungry if you skipped dinner). I want to make a Creole dish for a class of about 20. I enjoy cooking, and I consider myself knowledgeable at it, but I've never cooked for more than 5 at a time. I need something that's easy, inexpensive, portable (I'll be cooking at home and hauling it to class, which is a 30 minute drive), and not too time-consuming, and preferably a main course.
