(comments) Hi, I had signed CajunBobby's guestbook, and I began getting mail to help with my quest to try Cajun cooking. You were one of two that responded, and I appreciate it. Between the two responses, I've received bunches of recipes to try--thanks. The roux "cautions" are out there, aren't they? I haven't tried to make roux yet, but I'm willing to try anything. A friend of mine says he puts the flour/oil mixture in the microwave and makes the roux that way, and he says it tastes almost as good as the real thing. What say ye? I've tried to find some already prepared roux in the stores, but Virginia hasn't caught on, apparently. Thanks for the recipes and hope to hear from ya. Steve

(comments) We have a Cajun Festival at Townpoint Park in Norfolk, Virginia every year...what a blast...it's usually around the middle of June, and with our usual 100% humidity, once we start eating all that delicious Cajun food, we start sweatin' like stuck pigs...it usually draws 25-50 thousand people....they bring in zyde bands, everyone drinks lots and lotsa beer and has a ball....love yer website, I downloaded some of the midi files.
