Corn Chowder

1 medium onion chopped
1 medium bell pepper chopped
1 lb of ham, cut in bite size pieces
3 garlic cloves, chopped
1 tsp salt
1/4 tbs black pepper
4 cups of water
2 tsp vinegar
2 cans of whole-grain corn, or 4 ears of corn, cut in small chunks
1 cup of your favorite squash
1 cup of potatoes cubed
4 oz of tomato sauce
In a frying pan place ham, chorizo, onions, bell pepper, garlic. Saute for about 5 minutes, add tomato sauce, salt and pepper cook for another 2 or 3 minutes. Place mixture in a pot, add water, corn, potatoes and squash. Cook over medium flame for about 20 minutes. If desired mash some of the potatoes and squash to thicken. Served 6.
