Portugeuse Creme Caramel

2 cups milk
8 eggs
1\2 cup of sugar
1 drop of vanilla essence
1 lemon peel finely grated
1 cup of sugar(for the caramel)
Caramel:
melt one cup of sugar until liquid. quickly pour into round cake tin(medium)
swirl it around until tin is covered completely on the inside.
leave to set. sugar will crack when ready.
Creme:
mix all remaining ingredients and beat till frothy. pour in tin.
preheat oven to 180c. pour water in a oven tray. put tin in tray the water will reach half way.
Bake for 50 minutes. test by pricking creme with knife-should come out clean.
leave overnight in fridge. serves 4.
