        Margaret's Fragrant Fruit Loaf

        4ozs Mixed Dried Fruit
        4ozs Caster Sugar
        1/4 pt Hot Freshly Brewed 'Earl Grey Tea'
        2tbs Reduced Sugar Diced Cut Marmalade
        1 Egg
        8ozs Self-Raising Flour

        Place the fruit, sugar, marmalade and 'Hot Tea' in a bowl, cover and leave to soak overnight. Or at least six hours. Add the beaten egg and the sieved flour, mix well. Turn the mixture into a greased and base lined loaf tin (1 pound). Bake at 350f, 180c, gas mark 4 for 50-60 minutes.
        I invented this recipe myself and it is low fat and quite delicious.
