Mexican Lasagna

        Mexican Lasagna

        1 lb lean gr. beef
        1 pkg frozen chopped spinach
        1 lb Jack Cheese - grated
        1-16 oz sour cream
        1 8oz can tomato sauce
        1 pkg taco seasoning
        flour tortillas


        Fry meat, drain (make sure meat is chopped very fine. Add drained chopped spinach, seasoning packet and tomato sauce. Stir well and simmer 5 mins.
        Spray the bottom of 13 x 9 inch pan with PAM. Distribute a layer of tortillas on the bottom. Cut and piece to make on solid layer. top with 1/3rd of the meat/spinach mixture. Layer on top of the meat sour cream and then cheese.
        Repeat.
        Top off with a layer of tortillas. Spread sour cream on top to keep moist and top that with some Jack cheese and paprika. Bake 350 degrees for 45 mins.
        Wait a full 10 mins. prior to cutting into squares
        Serve with salsa and more sour cream.

        Everytime I make this everyone raves. My husband's, kid's and grankid's favorite.
