        Verene's South of the Border Eggs

        1 T Oil
        2 Med Mushrooms
        1/4 Green Pepper (Color optional)
        Slice of cubed eggplant / or summer yellow - green -zuchinni squash
        1/4 cup of cheese (choice of variety)
        3/4 cup salsa (mild or hot to taste)
        2 extra large eggs
        1/2 cup of milk

        Thoroughly mix eggs & milk & set aside. Chop peppers, eggplants-squash & cut mushrooms into half slices. Saute in oil until soft. Add eggs & cook until almost done. Add cheese & salsa & mix well. Cover & cook on low heat until firm. Serve with toast or Biscuits. You may add onions, crushed bacon, sausage or ham if desired. ENJOY!
