Southwest Chicken

1(11oz) can mild enchilada sauce(can be green or red)
1 can cream of mushroom soup
1/2 c. chicken boullion
2 cups cooked cut-up chicken breast
2 cups cheddar or colby cheese, shredded
20 corn tortillas(soft ones) cut in 1 in. cubes
*Remove stems and seeds from chili peppers. Roast on skewers over a grill until lightly browned. Chop into small pieces.
Mix sauce, soup, boullion together. Starting with tortillas layer ingredients to top of 2 quart casserole dish, with final layer cheese and tortillas. Bake in 350 oven until hot and bubbly. Serve with refried beans, salsa, and sourcream.
My family loves this including all my kids friends. I passed this recipe to a friend at work and she passed it to her whole family and it's also all around our church. Hope you like it.
