        Beef Tomato (or "Train Wreck")

        1lb. elbow mac
        1lb. hamburger
        2-28oz cans whole tomatoes in juice
        1 med onion
        1 green or yellow pepper
        1 clove garlic
        2tsp. chili powder
        dash of salt

        Brown hamburger in med to med-high heat and drain off fat. Slice onion and peppers, add to hamburger. Dice garlic and add to peppers and hamburger. Saute about 3-4 mins. open tomatoes and half then quarter them. Add both cans in. Stir in elbow mac, chili powder and salt. Reduce heat and let simmer for about 15 mins until all the tomato juice is absorbed into mac. Stir often.
        Serves 4-6
        Makes great leftovers and kids love it! I know my 2 yr old does. *L*

        When I was little my mom called this dish "train wreck" and it stuck. Kids thought it was funny when they asked me what I was having for dinner and said train wreck. They thought it was funny. *S*
