Zucchini Bread

        Zucchini bread

        3 eggs
        1 cup oil
        2 cups sugar
        2 cups shredded zucchini (unpeeled)
        2 tsp. vanilla
        1 can (20 0z) crushed pineapple (well drained)
        3 cups flour
        2 tsp. baking soda
        1 1/2 tsp. cinnamon
        1 tsp. salt
        3/4 tsp. nutmeg
        1/4 tsp. baking powder
        1 cup chopped pecans

        Beat eggs, oil, sugar & vanilla, until thick. Stir in remaining ingredients, mix well. Pour into 2 greased 9x5 loaf pans. Bake in preheated 350 degree oven about 1 hour or until toothpick comes out clean.
