        Four Cheese Zucchini

        3T Olive Oil
        1 thinly sliced onion
        1 minced garlic clove
        1 t basil
        3 1/2 C thinly sliced zucchini
        1/3 C vegetable broth
        2 T butter
        2 T flour
        1 C milk
        1 egg yolk beaten
        2 T whipping cream
        3 T freshly grated Parmesan cheese
        1/4 C grated Cheddar cheese
        1/4 C grated Mozzarella cheese
        1/4 C grated Provolone

        *
        Heat the oil in a large skillet. Add the onion, garlic, basil, and zucchini, and saute' for 3-5 minutes. Add a tablespoon of broth one at a time to prevent scorching.

        In a saucepan, melt the butter. Add the flour and cook over low heat for 2 minutes.

        Pour in the milk and cook, stirring constantly until sauce thickens. Remove from the heat.

        Whisk the egg yolk with a little sauce. Whisk into the sauce and cook 2 minutes longer, do not boil. Add the cream and cheeses. Pour over zucchini and serve.
        *Serves 4-6
