Rich Lemon Muffins

2 large eggs
1/2 c. fresh lemon juice
1/2 c. (1 stick) butter or margarine, softened
2 T. finely grated lemon rind
1/2 c. sugar
1 t. salt
1 T. baking powder
2 c. all-purpose flour
2 T. sugar

Preheat oven to 400 degrees Fahrenheit.  Grease a 12-cup muffin tin.

Place eggs, lemon juice, butter, lemon rind and sugar in mixing bowl.
Mix until thoroughly blended.  Stop and add salt, baking powder and
flour.  Being careful not to overmix, blend until ingredients are
thoroughly moistened.

Spoon into muffin cups; sprinkle top of batter with 2 tablespoons of
remaining sugar.  Bake until golden brown, about 15-20 minutes.

Makes 12 regular-sized muffins.
