Chocolate Macadamia Cookies
with White Chocolate Chunks


3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 cup margarine or butter, softened
1 teaspoon almond extract
1 egg
2 cups all-purpose flour
1/4 cup unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
6-ounce white baking bar, cut into 1/2-inch chunks, or 1 cup vanilla milk chips
3 1/2-ounce jar Macadamia nuts, coarsely chopped

Heat oven to 375 degrees. In large bowl, beat brown sugar and margarine until light and fluffy. Add almond extract and egg; blend well. Lightly spoon flour into measuring cup; level off. Stir in flour, cocoa, baking soda, and salt; mix well. Stir in remaining ingredients. Drop my rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Bake at 375 degrees for 8 to 12 minutes or until set. Cool 1 minute; remove from cookie sheets. Makes 2 1/2 to 3 dozen cookies.
