1 pound ground beef
1 pkg frozen McKenzie's vegetable gumbo mix
1 pkg frozen corn (or fresh corn is delicious in it!! add as
much as you
like)
diced potatoes (add as many as you like)
1 medium vidalia onion diced
1 big can (the big fat one) of diced tomatoes (I like to get the ones
with
garlic or Italian seasoning added)
1 can tomato paste
1/2 cup ketchup (or so...season to taste)
water.......less will make it like stew, more will make it like soup
brown the ground beef in the soup pot, drain about half the fat off
(it makes
the soup very flavorful if you leave some of the drippings)
add all the ingredients, season with salt, pepper, garlic salt, garlic
pepper,
rosemary, thyme, oregano to taste. (I usually sprinkle across
entire surface
of pot for the garlic salt, garlic pepper, salt & pepper, and across
half the
surface for the rest)
Sorry this isnt an exact recipe, but this is how I cook!! I also
love to add
pasta to this soup about 20 minutes before time to eat it!! the
kids like the
wagonwheels in it! I've also put the small elbows and penne.
Play around with the soup some, it's hard to go wrong!! Boil it
until the
potatoes begin to soften then simmer for about an hour or so on low
to let the
flavors combine. Just keep tasting it until it tastes like you
want it to!!
