Tortilla Pie

   1      pound         ground beef
   1                    onion -- chopped
   1      package       corn tortillas (dozen) -- cut in quarters
   1      can           cream of mushroom soup, condensed
   1      can           cream of chicken soup, condensed
   5      ounces        evaporated milk
  10      ounces        enchilada sauce
   1      pound         american cheese -- grated

Brown meat and onions.  Season to taste.  Mix soups, milk, and enchilada
sauce together and heat.  Add to meat.  Place tortillas on bottom of greased
casserole.  Add part of meat and soup mixture.  Top with a layer of cheese.
Continue layering. Save a few for garnishing.

                           Mexican Casserole II

   2      pounds        ground beef
   1      cup           onion -- chopped
   1      can           Ro-Tel
   1 1/2  tablespoons   chili powder
   1      teaspoon      cumin
     1/2  teaspoon      garlic powder
                        salt and pepper to taste
   1      can           cream of mushroom soup, condensed
   1      can           cream of chicken soup, condensed
     3/4  can           water
   1                    to pkgs. corn tortillas
     3/4  pound         cheddar cheese -- grated

Brown ground beef and onion.  Drain.  Add ro-tel, chili powder, cumin,
garlic powder, salt, pepper, soups and water.  Simmer all ingredients
for 15 minutes.  Stir often.

Layer tortillas, sauce, cheese, repeat.  Bake at 350 for 1 hour.

                      Meatballs with Mushroom Gravy

                        ----Meatballs----
   1      pound         ground beef
     1/2  cup           dry bread crumbs
     1/4  cup           milk
   1                    egg
   1      tablespoon    minced onion
   1      teaspoon      parsley
   1      teaspoon      salt
     1/8  teaspoon      pepper
     1/2  teaspoon      worcestershire sauce
                        ----Gravy----
   1      can           cream of mushroom soup, condensed
     1/4  cup           milk
   1      teaspoon      worcestershire sauce

Mix all meatballs ingredients together.  Shape mixture by rounded
teaspoonfuls into 3/4-inch balls.  Bake in 375 degree oven for about 10
minutes, or simmer on medium heat in frypan.

Gravy:
Drain drippings.  Add one can cream of mushroom soup.  Blend in 1/4 cup milk
or water.  Add 1 teaspoon worcestershire sauce.  Stir often over medium
heat.  Add cooked meatballs.  Serve over rice or noodles.

                             Salisbury Steak

   1      pound         ground beef
   1                    egg
   1                    onion -- chopped
   1                    beef bouillon cube
     1/2  cup           water

Mix beef, egg and onion.  Shape into patties and brown over high heat, drain
off any fat.  Pour in bouillon and simmer uncovered until desired doneness.
