HELPFUL HINTS FOR THE KITCHEN


Don't add sugar to stewed fruits until they have boiled for 10 minutes. They need less sugar then.


Add a teaspoon of lemon juice to each quart of water used to cook rice. The grains will stay white and separated.


Lettuce won't "rust" in the refrigerator if it is wrapped in paper toweling.


Remember that every time you open the oven door the temperature drops about 25 degrees.


When food is too salty add a cut raw potato, then discard the potato once it is boiled.


If the dish is too sweet, add salt. If a main dish or vegetable is too sweet add a teaspoon or two of vinegar.


To get the corn silk off of corn on the cob, brush downward with a paper towel.


To cut a pie into five equal pieces, first cut a Y in the pie and then two large pieces can be cut in half.

HELPFUL TIPS ON POTATOES


BAKING: Insert aluminum or stainless steel kitchen nail into each potato to promote uniform baking in the oven.


PEELING:First boil potaoes in their skin to help preserve the nutritive value.


BOILING: Do so with the skin on - boil to desired softness, pour off water, turn down the temp. or flame, place vessel back on fire until the sizzle stops, now peel and mash, etc.


STEWS:Boil the potatoes separately, peel and add to the pot of stew.


MASHING:Hot milk is better than cold milk for adding to potatoes to be mashed. A teaspoonful of baking powder added before mashing will make them light and creamy too.


SLICED FRIED POTATOES:Sprinkle the sliced potatoes to be fried with a pinch of flour to make them a golden brown.
