Substitute whatever types of veggies you prefer. I bought some Broccoli sprouts and flour tortillas (called soft wraps) and we had ham sandwiches on Sunday - so I had some left over Deli ham. I made myself a sandwich roll-up with a generous amount of sprouts, and mustard and ham and then rolled it in a flour tortilla. It was delicious!
This is what I am making for dinner tonight:
Chicken and Pasta Bake with Basil
3 C broccoli florets, steamed 4 minutes ( or you could substitute frozen broccoli cooked 3/4 of the way in the microwave.)
4 C hot cooked penne noodles (8 oz dry)
3 C cooked, shredded chicken
2 C hot Asiago sauce ( see following recipe)
1T basil
1/2 t black pepper
1/4 t salt
1/2 t minced garlic
Combine all ingredients and place in greased 11x7 casserole . Bake at 350F for 20 minutes. 6 servings.
Hot Cheese Sauce:
To 1/4 C flour gradually add 2C 1%milk. Whisk until smooth. Heat over med.. heat until thick stirring ~8min. Remove from heat. Add 1 C Asiago cheese ( I found a pack of grated cheese called Kraft Italian blend - which included Asiago - so that is what I am using). Stir until melted.
If you wanted to make a cheddar sauce instead - stir in 1-1/4C grated cheddar cheese instead of the Asiago.
