- 1 pound lean ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 28-ounce can stewed tomatoes, including liquid
- 2 packages taco seasoning mix
- 1 paackage dry ranch dressing mix
- ½ cup picante sauce
- 1 8-ounce can tomato sauce
- 2 14 ½-ounce cans niblet corn, including liquid or use hominey
- 2 14 ½-ounce cans pinto beans, including liquid
- 2 cups water
- Grated sharp Cheddar cheese
- Crushed tortilla chips
- In a large pot, saute ground beef, onion and green pepper until beef is brown and vegetables are tender. Drain off any grease from pan.
- Add next 8 ingredients and simmer for 45 minutes.
- Garnish each serving with generous amounts of grated cheese and crushed tortilla chips. Serves 8 to 10.
