Red Potato Salad
Ingredients
- 6 medium red potatoes, cubed, unpeeled
- 1 cup celery, thinly sliced
- 1/2 cup onion, finely chopped
- 1/3 cup sweet pickle, chopped
- 1 1/4 cups mayonnaise
- 2 teaspoons sugar
- 2 teaspoons celery seed
- 2 teaspoons vinegar
- 2 teaspoons mustard
- 1 1/2 teaspoons salt
- 2 hard boiled eggs
Boil potatoes in water 25-30 minutes until tender, but not mushy; drain.
Add celery, onion, and sweet pickles. Combine mayonnaise, sugar, celery
seed, vinegar, mustard, and salt. Mix sauce with potatoes. Add eggs and
mix. Cover and chill.
