SAUCEPAN FUDGIES

Preparation time: about 20 minutes
Oven temperature: 300 degrees F
Chilling time: about 30 minutes
Baking Time: 18 to 20 minutes
These easily made, crackly looking cookies are soft inside and crunchy outside. They store well and can also be frozen.

For 4 dozen cookies you will need:
4 squares (4 oz) unsweetened chocolate
1/2 cup butter or margarine
2 cups sugar
2 eggs
1 tsp vanilla extract
2 cups all purpose flour
2 tsp. baking powder
1/4 tsp salt
1/2 cup chopped pecans or walnuts
Powdered or granulated sugar for rolling.

Preparation
In large, heavy saucepan, melt chocolate and butter over low heat, stirring constantly. Remove from heat. Cool slightly.
Beat in sugar. Add eggs, one at a time, beating thoroughly after each addition. Stir in vanilla.
Mix flour, baking powder and salt. Stir into mixture. Fold in nuts. Chill for about 30 minutes.
Shape dough into 1- inch balls. roll in powdered or granulated sugar. Arrange on ungreased baking sheets.
Bake at 300 degrees for 18 to 20 minutes. Remove from sheets to wire racks. Cool. Store airtight.
