We are vegetarians. Here I will post some of out favorite veggie recipes. Enjoy!!

Veggie Stuffed Peppers

Ingredients:
2T. vegetable oil
1 c. rice cooked
1 med. onion chopped
4 cloves garlic
1 t. ground cumin
1 t. ground coriander
1 can kidney beans
1 can black beans
1 tomato chopped
1 sm. jar spanish olives chopped
2 T. soy sauce
1 can tomato juice
4 red peppers
Monterey Jack cheese and sour cream(optional)

1) In a skillet, heat oil and add onion and garlic. Heat until tender.
2) Add rice, beans, tomatoes and spices. Stir in about 2 cup of the tomato juice. Simmer on the stove top until it thickens.
3) While the filling is simmering, wahs and cut peppers in half lengthwise. Place them in a 13x9 inch pan with about 1/2 inch of tomato juice on the bottom.
4)Stir the olives and soy sauce into the filling mixture.
5)Spoon filling mixture into the peppers. Cover tightly with foil and bake in a 350 degree oven for 40-50 minutes or until peppers are tender.
6)Serve topped with Monterey Jack cheese and/or sour cream.
