1 lb. shrimp, scallop or squid
4-6 cloves of garlic
1/4 tsp whole black or white peppercorn or 1/2 tsp ground pepper
salt
1 tbsp. oyster sauce
2 tbsps. sugar
1 tbsp. fish sauce
In a mortar pound a sprinkle of salt, garlic and pepper into a fine paste.
Wash and peel shrimp, clean and fillet squid, wash and drain scallops (any size).
In a frying pan heat up 1-2 tbsp oil, spoon in paste and stir for several seconds.
Add in the seafood and stir until flesh gets firm or changes color.
Flavor with oyster sauce, fish sauce and sugar. Add a dash of ground pepper if needed.
Serves 2-4.
