1 lb. firm fleshed white fish
4-6 dried Shiitake mushrooms, reconstituted, destemed and sliced into strips
1-2 finger of ginger, peeled and sliced into matchsticks
2-3 scallions, sliced lengthwise diagonally 1 1/2 to 2 inches long
3/4 - 1 cup thin Chinese white soy sauce
1. In aluminum foil put in fish and heap with mushrooms, ginger and scallions.
2. Pour soy sauce on top and seal.
3. Put into hot steamer and cook for 10-15 minutes, or until fish is done.
