Sweet & Sour Shrimp or Chicken
Note that this is an approximation, try it at your own pace.

battered fried shrimp or chicken (see below)
2 medium tomatoes, diced
1 medium onion, cubed
1 medium cucumber, peeled, deseeded and cut into bite size chunks
1 bell pepper, cut into stir-fry pieces
fish sauce
sugar
garlic powder
white vinegar
3-4 cloves of garlic, crushed and chopped
1-1 1/2 tbsp cornstarch diluted in water

Make the batter fried shrimp or chicken a little beforehand. Prepare the vegetables.
In a large skillet fry the garlic in 2-3 tbsps of vegetable oil. Add in vegetables from the longest to cook (cucumber) to the fastest to cook (tomato).
Once the vegetables start to cook down a little, add in the shrimp or chicken.
Stir in white vinegar, fish sauce and sugar one tablespoon at a time until you get a nice sour, salty and sweet taste.
Give a few shakes of garlic powder and white pepper.
When the dish starts to bubble, thicken with the diluted cornstarch. Served over white rice.

For the battered shrimp or chicken:

1 chicken breast, cut into pieces or 8-10 medium shrimps, peeled and deveined
1 cup all purpose flour
about 1 cup cold water
1 egg
1/2 tsp salt
1 1/2 tsp garlic powder
1/2 tsp white pepper
oil for deep frying

In a bowl add salt, garlic powder and white pepper to flour. Pour in water and mix in egg until batter is slightly lumpy.
Batter chicken or shrimp and fry until lightly golden brown. Set aside for the sweet and sour.
