Kanom Gai Nok Gla Ta - Thai Donut

2 cups sweet potato, steamed and thoroughly mashed
3/4 cup cassava starch
2 eggs
3 tablespoons coconut cream
3 tablespoons sugar
1/2 teaspoon salt
1 teaspoon baking soda
oil for frying

1. Sift together the cassava starch and baking soda in a bowl.

2. Stir in the sweet potato with the flour mixture, add salt, eggs and sugar. As you mix, gradually add in the coconut cream. Mix well.

3. Form dough into in small balls the size of a partidge's egg (hence the Thai name). Deep fry in oil at medium heat until golden brown. Remove from the oil in a frying basket.
