BROILED SCAMPI, VENETIAN STYLE* For 6

36 jumbo shrimps
6 garlic cloves
2 tsp salt
3/4 cup butter
3/4 cup sunflower oil
1/4 chopped parsley
2 tbsp lemon juice
Ground pepper.

Preheat oven , broiler only.
Slit shrimps lengthwise, without cutting back of shell, and remove back vein. It will easier to eat them if at this stage you peel them off the shell and restuff them back
Crush garlic with salt in a mortar to make a paste.
Melt butter and mix with oil, garlic, parsley, lemon juice and pepper.
Holding shrimp by the tail, dip in the oil mixture and place belly up in oven resistant pan, in a single layer.
Cover with any remaining sauce.
Broil for 15 minutes, 6 in from the broiler.
Serve hot over a lemon rice bed. Spoon sauce over rice.( See recipe for Lemon Rice).
