                            Patti's Dumplings

  Amount  Measure       Ingredient -- Preparation Method

                        ground chicken or pork (I prefer chicken)
                        ground shrimp (optional)
   5                    dried chinese mushrooms -- soaked in water and
                        excess water drained out, and finely
                        chopped
                        light soy sauce -- about 1-2T
                        bit of sugar
   1      pinch         salt
                        egg white
   2      T             finely chopped bamboo shoots -- (2 to 3)
                        white pepper
   1      t             cornstarch
   1                    finely chopped scallions
   1      T             sherry
     1/2  t             finely shredded ginger
   2                    garlic cloves -- minced
   1      pkg           Gyoza skins -- or dumpling
                        wrappers.

Mix all ingredients. Place 1 heaping teaspoon filling in center of dimsum wrapper. Gather up like a little purse. Steam 15 mins.
