                      Traditional Chinese Soup Stock

   1      whole         chicken, appx 2 pounds
   3      slices        ginger
   1 1/2  stalks        green onion
                        enough water to cover whole chicken
                        salt to taste

Cut the chicken into several pieces.  Skin and trim off fat; discard.

Place shicken, ginger, green onion and water into a large pot.

Bring to a boil, cover and simmer for about 2 hours.  Salt to taste.

Skim off curface scum; remove chicken and seasoning. Reserve stock for soup or cooking sauces.  Keep refrigerated or frozen.
