               Baked Aubergines With Tomatoes And Parmesan

  10      fluid ounces  oil
   2                    aubergines cut lengthwise in slices 1/2"
                        -- thick
   8      fluid ounces  cold basic tomato sauce
   4      ounces        mozzarello cheese -- sliced
   4      ounces        grated parmesan cheese
  12                    fresh basil leaves

Preheat oven to Gas Mark 5, 190 C

Heat oil and fry the sliced aubergines until golden brown.  Drain well on kitchen paper.

Cover the bottom of an 8" baking dish with about 2 tbsps tomato sauce.  Arrange a layer of aubergines on top, all pointing the same way.

Cover with a layer of mozzarella, a layer of tomato sauce, a layer of parmesan cheese and a few torn basil leaves.  Repeat two or three times, ending with a thickish layer of tomato sauce and plenty of cheese and basil.

Bake in the oven for 20-25 minutes.  Serve cold or just warm.
