1 1/4 lb Linguicia sausage
1 Papaya -- *

* Use a large, firm-ripe papaya. Peel it, seed it and
cut it into 1" chunks. The papaya should be firm,
i.e., just after it turns yellow. In Hawaii we let it
tree ripen. Here on the mainland that is not possible.
Prick sausages all over with a fork. In a large fry
pan, bring about 1 inch of water to boiling. Add
sausages, cover and simmer until they are hot
throughout, about 6-8 minutes. Lift out and let cool.
Cut sausages into 1/2 inch thick diagonal slices. On a
thin wooden skewer, impale a piece of sausage, a piece
of papaya, and another piece of sausage. Repeat. May
be made ahead and chilled, covered overnight. Grill or
broil until meat is lightly browned on both sides
about 5 minutes total. Be careful not to burn. Serve
with lime to squeeze over each serving. Serve with
Terriyaki Beef Sticks (see recipe), Chinese Barbequed
Spareribs (see recipe) and Sushi. I would suggest you
purchase fresh forms of sushi since that is an Island
favorite. For those afraid of the raw fish buy a
California roll which uses vegetables. Supply soy for
dipping. Sushi can be purchased in some large
supermarkets made fresh daily, or inquire at a local
Japanese restaurant.
