Did you see Schindler's list? The film was all in black and white, but when the jews were moved away from the ghetto, amongst all those grey figures there was a little girl in a red coat... A very impressive scene!
You can make color accents too, in your artwork!

 

Open the image you want to work on. Shift-D (Duplicate the image) and close the original one: always work on a copy! Make it 16 Million colors, of course! Now Ctrl-C, Ctrl-V or Edit > Copy

and Edit > Paste > As New Image

Now Colors > Greyscale and

Colors > Increase Color Depth > 16 Million Colors.
Next Edit > Copy this new image, activate the original image, and Edit > Paste > As New Layer on the original

Now you have what appears to be a grey version of the original colorful image, but what really is a grey layer sitting on top of the colored one.
All you have to do now is select the eraser

Open the tool options windows and set the options as you think appropriate

Now just erase the greyness from the part(s) of your image that you want color - accented (If you find the effect is not as you like it, press that wonderfull conbination of Ctrl-Z, adjust the settings, and try again!)

Using this method you can produce a colored rose on a grey bush, or a full colored person in a grey crowd.

For variation on this, before starting to erase parts of the grey colorize (Colors > Colorize) the grey layer to make it blue, or green, or whatever!

Nice one, isn't it?
