Potato Toppers
- 1 8oz cup plain low fat yogurt
- ½ cup ricotta cheese
- 1 tbs. each grated cucumber, green pepper, onion
- pepper to taste
Combine all ingredients, mix well. Cover and chill.
Tuna Croquettes
- 1 cup dry bread crumbs
- 1 6oz can drained water packed tuna
- 1 cup grated carrots
- ½ cup skim milk
- ½ cup diced celery
- 1 beaten egg
- 1 tbs. onion
- pepper to taste
Combine ingredients and shape into cones. Place on pan sprayed with Pam and bake at 400 for 20 minutes.
Snacker-Crackers
- 1 pack dry ranch style dressing
- ¼ tsp. dried dill weed
- ¼ tsp. lemon-pepper seasoning
- 1/ tsp garlic powder
- 2 11 oz boxes oyster crackers
- ½ cup vegetable oil
combine all ingredients and serve with snack crackers.
