Mountain Recipe: HITW Chili

Below are two chili recipes that were used at the Hole In The Wall. The first one, I believe, is the recipe used at the HITW in Welch. The second one, I believe, is the recipe used at the HITW in War. They were shared on the West Virginia, McDowell County mailing list. Enjoy! (:

HITW Chili

"The easiest way to fix it is to take 1 med. onion and dice it fine, 1 bell pepper and do the same. Place into a cast iron skillet with about a tablespoon of butter and saute it. Then take about 2-3 pounds of ground chuck, 1 can of your favorite spaghetti sauce and several pieces dry bread. Add the hamburger to the saute onions and peppers and fry it up and drain the grease into a cup to add later. When the meat is done, add the sauce to the hamburger and a couple of pieces of the stale dried bread. Once the sauce begins to bubble on low heat, take an old hand potato masher and while the ingredients are cooking, begin to mash the sauce. Add about 2 teaspoons of chili powder or to your taste and about the same garlic powder or to your taste and continue to mash. Then add about a tablespoon of paprika, about a tablespoon of salt or salt to taste, and another slice of dry bread. Continue to mash the chili and add more bread until it is the constistancy you remember. While you mash the chili add a couple spoons of the grease you drained from the hamburger. The Chili powder and the Garlic Powder should be added to suit your taste. When I would make it at the Hole in the wall, I would take a big tin pot and fill it about 3/5 deep with water, add a cup of dried onions and a cup of dried green peppers and place a beef roast in the bottom and cook the beef roast. I would serve these usually on Thursdays or Fridays as a special. I would then add about 4-5 pounds of ground chuck along with about a cup of garlic powder, 1/2 cup of dried parsley flakes, 1/4 cup of oregano, 1/8 cup of paprika and any left over tomatoes and onions I have had in the fridge and 2 cans of tomato sauce with 2 cans of tomato paste. If it became a little sour I would add a couple pinches of sugar. I would let the mixture cook down until it got rather thick. I would then remove the roast and would have my spaghetti sauce. Then I would take a portion of the spaghetti sauce and place it into a tin sauce pan and begin adding dry bread and chili powder and mash it together until it became the consistency of the hot dog chili I would use. When I would make chili, I would simply take some of the spaghetti sauce and place it into a tin sauce pan add chili and some red beans and have chili beans.

To fix my sauce, I would begin around 4:00 am cooking and cook it until around 8:00 am.

"Just wanted to send this recipe out to all that has asked for it. I know I said I would post it a lot earlier, but things happened and it kind of got stuck last. Anyway, this was gave to me by a relative that said that they got it from someone that worked in the Hole in the Wall. Hope it all comes out OK and hope everyone likes. HITW Chili

Brown 2 1/2 lbs. hamburger and then add
2 tsp salt
1 tsp pepper
2 tsp chili pepper
3 tsp oregano
3 tsp paprika
1 tsp hot sauce
4 cups water
1 cup oil
1 cup chopped onion
1 cup cracker crumbs
