Martha Washington's Plum Pudding
According to her time honored recipe, you take three days to prepare this dish.
Ingredients
2 1/2 pounds prunes
1 1/2 pounds raisins
3/4 cupbrandy
2 teaspoons cinnamon
1/2 teaspoon cloves
1 teaspoon allspice
2 teaspoons mace
1 1/2 teaspoons nutmeg
1 pound beef suet, minced
1/2 cup grated orange peel
1/4 cup grated lemon peel
1 pound citron
2 cups flout
7 eggs, beaten
2 cups sugar
First prunes and raisins are cooked until soft. Leave the fruit in its cooking water and add brandy and the spices. Let the mixture steep for 2 days in a cool place. When the day comes for baking, drain off liquid. Add beef suet, grated orange and lemon peels, and citron, combining further with flour, eggs and sugar. Press into a buttered bread-loaf pan, covering tightly, and steam for 6 hours.
