Spinach Dip

1 small red onion (diced)
1 cup mayonnaise (Miracle Whip is not as good in this
1-1/2 packets Lipton Vegetable Soup Mix
1 lb. frozen spinach (thawed and drained)
1 12oz. container sour cream

Mix all ingredients together and refrigerate overnight. Serve with crackers

Super Easy Chili Cheese Dip

2 jars Tositos cheese dip (Salsa Con Queso)
1 lb. hamburger, cooked and drained well

Mix cheese dip and meat in crock pot. Turn on low and heat for 2-4 hours. Serve with corn chips. Can also use sausage instead of hamburger.

BLT Dip

1 cup mayonnaise
1 cup sour cream
1 tomato (seeded and chopped)
1 small jar real bacon bits

Mix all ingredients together and refrigerate. Serve with crackers.
Dawn's Note: I love this dip ... you can also fry real bacon and crumble it, and serve it with bagels. I cut them into bite sized pieces - it's wonderful!

Bacon Breadsticks

1 box of skinny breadsticks
one bacon slice for each breadstick (cut bacon in half lengthwise)
1/2 cup parmesean cheese, finely grated

Slide bacon through cheese and wrap around breadstick. Place on cookie sheet (don't use an edgeless cookie sheet). Bake at 275 for 35 minutes. Let cool.

Chicken Cheese Ball

1 8oz. package cream cheese
1 large can (white meat) chicken
1 envelope dry ranch salad dressing mix
dried parsley

Mix cream cheese, chicken, and ranch dressing. Shape into a ball and roll in parsley. Serve with crackers.

Stuffed Mushrooms

Take the stems off medium to large sized mushrooms. Chop stems and mix with cooked italian sausage, chopped pepperoni, and any of your favorite Italian spices. Place mushroom tops upside down in shallow baking dish or crockpot in a bit of butter. Fill with stem mixture and top with shredded cheese. Cook in oven at 300 - or crock pot for 20-30 minutes.

Seasoned Pretzels

1 cup oil
1 Tbsp. garlic powder
1 Tbsp. dill weed
1 packet ranch dressing seasoning
1 bag small pretzels

Mix oil, garlic powder, dill weed, and ranch dressing until blended. Add pretzels to mixture and stir to coat. Continue coating pretzels until dry.

Pepperoni Rolls

1 bag pre-sliced pepperoni
2-3 tubes Pillsbury Crescent rolls
1 medium bag shredded mozzarella

Unroll the crescent rolls. Put 2-3 slices of pepperoni per roll. Sprinkel cheese over pepperoni. Roll the crescent roll. Bake as instructed on tube (about 13 minutes). Good hot or cold!

Pizza on the Ritz

8 oz. cream cheese, softened
1 can mini shrimp
1 jar (12 oz.) seafood cocktail sauce
8 oz. mozzarella cheese, shredded
1 green pepper, chopped
2 tomatoes, chopped
2-4 green onions, chopped (using tips too)
Ritz Crackers (Wheat Thins and Trisket are also good)

Spread softened cream cheese on round platter. Leave outer edge (1 - 2 inches) clear to put the crackers on. Drain the shrimp. Combine with the cocktail sauce, and spread over the cream cheese. Sprinkle the shredded cheese over the top of the sauce. Layer green pepper, tomatoes, and green onion on top of the mixture. Finally, place the crackers around the outside edge.

Puppy Chow

Box of Rice Chex cereal
Bag of chocolate chips
1 cup peanut butter
1 cup powdered sugar

Melt chocolate and peanut butter together in a sauce pan or double-boiler. Mix melted misture into the Rice Chex until all the cereal is covered. Once the mixture is slightly hardened, break up the cereal into snack sized pieces. Finally, add the powdered sugar to the mis, and mix thoroughly.

Walnut Date Bars

1 box yellow cake mix
3/4 cup brown sugar
3/4 cup melted butter
2 eggs
2 cups chopped walnuts
2 cups chopped dates

Combine cake mix and brown sugar. Add melted butter and eggs. Beat with mixer for 2 minutes. Batter will be very stiff. Add walnuts and dates. Bake in a greased 9x13 pan for 25-30 minutes (until done). Do not get too brown! Cool and cut into bars. These are very chewy and delicious!!

SKOR Bar Squares

1 bag of SKOR Chipits
1 can sweetened condensed milk
1 box ritz crackers

Crush Ritz crackers with rolling pin (if you leave them in the bag it is less messy). Add the can of milk, and all but 1/4 cup of the SKOR chipits. Mix all ingredients and press into an 8x8 greased pan. Bake at 350 for 20 minutes. Let cool and top with icing, and sprinkle remining chipits on top.

Apple Cinnamon Crisp

The ingredients needed depends on the size of your cake pan. I normally us a 6" pan (like a round cake pan) - and it must have straight edges (not angled).

For 6" pan:
2 Granny Smith apples
1 tube Pillsbury dinner rolls
2 tubes of the sugar-cinnamon mix
1/4 cup sugar
3 Tbsp. butter, melted

Pour sugar-cinnamon (entire tube) into a bowl. Add more sugar. Cinnamon will stick to bowl once the butter gets into the mix, this is okay. Peel apples and quarter them. Remove core and seeds. Slice each quarter very thin. Reserve some slices for later. Cut each uncooked dinner roll into 4 and set aside. Line the inside of the pan with the thin apple slices. Not the bottom, just the sides. You will then repeat the next 4 steps until the entire pan is filled.

1. Roll section of dinner roll in butter, cover completely.
2. Roll dinner roll into sugar-cinnamon mix, cover completely.
3. Place dinner roll into the pan. Slide (almost squish) the roll to the apple slice.
4. Place an apple slice on each side of the dinner roll.

You want to be sure there is an apple slice between each dinner roll section. With the leftove apple slices, chop into small pieces. Sprinkle on top of entire pan. Bake as instructed on the dinner roll tube.

German Chocolate Upside Down Cake

1 cup chopped pecans
1 cup coconut
1 box german chocolate cake mix
1 package (8 oz.) cream cheese
1 stick butter or margerine
1 box confectioners sugar

Spread pecans and coconut in bottom of greased 9x13 pan. Make cake mix according to package directions. Pour over nuts and coconut. Mix cream cheese, butter, and powdered sugar until creamy. Spoon over cake batter. Bake 35-40 minutes at 350 degrees. Do not overcook - it will look like it is not done. Let cool completely before cutting.




Salads

Broccoli & Cauliflower Salad

One head of broccoli
One head of cauliflower
2 cups shredded cheddar cheese
1 cup sour cream
1 cup Miracle Whip
1 tsp lemon juice
1/4 tsp. garlic salt
salt & pepper to taste

Cut up broccoli and cauliflower to bite-sized pieces. Combine cheese, sour cream, Miracle Whip, lemon juice, garlic salt, and salt & pepper. Mix with cut up veggies only until blended. If you lime it creamier, add equal amounts of sour cream & Miracle Whip. If you use mayonnaise, add 1 tablespoon sugar.

Margarita Punch

Use two 2 liter bottles of Mountain Dew (or Wal-Mart's Citrus Drop) and add tequila and ice to taste. Add slices of fresh citrus fruits (oranges, grapefruit, and limes work best together). The fruit slices look pretty floaking in the punch bowl, and they soak up the tequila a bit.
