Mudslide Pie (Aug 6)

6 oz semi-sweet chocolate chips
1 tsp instant coffee
1 tsp hot water
3/4 cup sour cream
1/2 cup sugar
1 tsp vanilla
1 (9 inch) chocolate crumb crust
1-1/2 cups whipping cream
1 cup powdered sugar
1/4 cup cocoa powder

Melt chocolate in a small heavy saucepan over low heat, stirring until smooth. Remove from heat; set aside to cool. In medium bowl, combine instant coffee and water. Add sour cream, sugar and vanilla; stir until sugar is dissolved. Stir in melted chocolate and mix until smooth. Spread into crust and chill several hours or overnight. In a small bowl combine cream, powdered sugar and cocoa powder and beat on high speed until stiff peaks form. Spoon onto pie.


Fudgy Peanut Butter Squares (Aug 13)

1 box yellow cake mix
1 cup chunky peanut butter
2 eggs
1/2 cup butter or margarine, melted
1 cup chocolate chips
14 oz can sweetened condensed milk
2 Tbs butter or margarine

Combine cake mix, peanut butter, eggs, and 1/2 cup melted butter. Pat 2/3 of the mixture into the bottom of an ungreased 9x13" pan. In a saucepan, combine chocolate chips, sweetened condensed milk, and 2 Tbs butter. Melt over low heat, stirring until smooth. Remove and pour over cake mixture. Use remaining dough to cover filling. Bake at 350 degrees for 20 to 25 minutes. Cool completely before cutting.


Chocolate Cherry Cobbler (Aug 20)

1-1/2 cups flour
1/2 cup sugar
2 tsps baking powder
1/2 tsp salt
1/4 cup butter
6 oz semi-sweet chocolate chips
1/4 cup milk
1 egg
21 oz can cherry pie filling
1/2 cup nuts, finely chopped

Preheat oven to 350 degrees. In large bowl, combine flour, sugar, baking powder, salt. Cut in the butter with a pastry blender until mixture is crumbly. Melt the chocolate chips over hot (not boiling) water; remove from heat and set aside to cool slightly (about 5 minutes). Add milk and egg to melted chocolate and mix well. Blend chocolate into flour mixture. Spread cherry pie filling in bottom of 2 quart casserole. Drop chocolate batter randomly over cherries. Sprinkle with chopped nuts. Bake at 350 degrees for 40 - 45 minutes. Serve warm with whipped cream or ice cream. Makes 6 servings.


Chocolate Crinkles (Aug 27)

1/2 cup vegetable oil
4 oz unsweetened chocolate, melted
2 cups sugar
4 eggs
2 tsps vanilla
2 cups flour
2 tsps baking powder
1/2 tsp salt
1 cup powdered sugar

Mix oil, chocolate and sugar until well blended. Stir in one egg at a time until well mixed. Add vanilla. Sift together flour, baking powder and salt; add to chocolate mixture. Mix well and chill for several hours or overnight. Preheat oven to 350. Roll teaspoonfuls of cookie dough into balls and roll in powdered sugar. Place 2 inches apart onto greased cookie sheet. Bake 10-12 minutes or until almost no imprint remains when touched lightly in center. Makes 6 dozen cookies.
