EASY RICE PUDDING

5 cups milk
2/3 cup uncooked long grain rice
3/4 cup sugar
1/4 tsp salt
2 tsp vanilla

Bring the milk just to a boil, stir in rice, sugar and salt. Return to a boil, then reduce heat and simmer, covered for 45 minutes, or until rice is creamy and most of the milk has been absorbed. Remove from heat and stir in vanilla.
I serve this chilled, with fresh berries on top in the summer, and warm with raisins in the winter. You can make this a low-fat dessert by using 1% milk instead of whole milk.
