2 eggs
1 cup sugar
1 cup dairy egg nog (from a carton, not a can)
1/2 cup butter, melted
2 tsp rum extract
1 tsp vanilla
2-1/4 cups flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
Preheat oven to 350 degrees. Stir together dry ingredients; set aside. Beat eggs and add sugar, eggnog, butter, rum extract and vanilla; blend well. Add dry ingredients and stir just until moistened. Pour into greased loaf pan. Bake at 350 degrees for 45-50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely.
