4 cups milk, divided
5 eggs, separated
1 cup flour
1 cup sugar, divided
2 T vanilla

Beat the egg yolks with 1 cup of milk. Mix together the flour and 1/4 cup of sugar. Warm 3 cups of milk, the remaining 3/4 cup sugar and the vanilla, add egg yolk mixture slowly and heat until mixture comes to a boil and thickens. Remove from heat and refrigerate until well chilled. Beat the egg whites with 1/4 cup of sugar to a soft peak and fold into the pudding. Sprinkle with cinnamon and nutmeg.
