2 lbs lean pork, cubed
2 Tbs oil
1 large onion, chopped
2 cloves garlic, minced
6-8 Anaheim chiles
1 potato, peeled and diced
2 tomatoes, peeled and chopped
3 cups water
Roast chiles over an open flame or in a very hot oven until charred. Peel, seed and chop; set aside. Brown pork in the oil. Add onion and garlic; sauté for about 3 minutes. Place the pork, onion, garlic and remaining ingredients (including chiles) in a Dutch oven and simmer for 1 1/2 to 2 hours or until the meat is very tender.
