Bon Appétit EGGS  -  MAIN COURSES
RECIPE NAME:  AVOCADO OMELET 
RECIPE BY: BON APPETIT!

PREPARATION TIME: 40 minutes
 INGREDIENTS:
2 - eggs -
2 tablespoons water -
1/4 teaspoon salt -
1 tablespoon butter -
1/2 - avocado peeled and sliced
2 - tomatoes thinly sliced
1/4 cup alfalfa sprouts -
2 tablespoons plain yogurt -
1 tablespoon walnuts (optional) chopped
 
DIRECTIONS:
  •  Mix eggs, water and salt.
  • Heat butter in 8 inch omelet pan until hot.
  • Poor in egg mixture which should set at center, titling pan occasionally so uncooked eggs can flow to bottom.
  • While top is moist arrange all but two slices of avocado, tomato slices and sprouts on half of omelet.
  • Fold omelet over filling and turn out unto plate.
  • Top with 2 avocado slices, yogurt and nuts (if wanted).
