Barley Mushroom Soup

mushrooms
cleaned and sliced

Tamari

beef Bovril, pepper
to taste
DIRECTIONS:
Rinse barley and bring to a boil in 2 quarts water.
Add a dash of salat, reduce heat, and simmer 40 minutes.
Meanwhile, saute onion, carrot and mushrooms in oil.
Add to barley after 40 minutes and simmer another 15 minutes or until barley is tender.
Season to taste with tamari and cook 5 minutes more.
Garnish with chopped scallions if desired.
