Bon Appétit SOUPS  -  VEGETARIAN
RECIPE NAME:  Barley Mushroom Soup

SERVING SIZE: 6 servings
PREPARATION TIME: 1 hour 15 minutes
 INGREDIENTS:
1 cup barley -
1 medium  onion chopped
1  - carrot sliced thin
1/2 pound mushrooms cleaned and sliced
1 tablespoon oil -
- - Tamari to taste
- - scallions optional
- - beef Bovril, pepper to taste
 
DIRECTIONS:
  •  Rinse barley and bring to a boil in 2 quarts water.
  • Add a dash of salat, reduce heat, and simmer 40 minutes.
  • Meanwhile, saute onion, carrot and mushrooms in oil.
  • Add to barley after 40 minutes and simmer another 15 minutes or until barley is tender.
  • Season to taste with tamari and cook 5 minutes more.
  • Garnish with chopped scallions if desired.
